Perle des Dieux’s vintage sardines, best served with bread and butter, are gifts fit for the
discerning foodie. This recognised Entreprise du Patrimoine Vivant, or Living Heritage
Company, has produced vintage sardines for more than 130 years in a strictly-regulated
process according to very specific requirements. Every sardine has a minimum fat content of
12%, and are sorted, cut and canned by hand in extra virgin olive oil, where they slowly confit
over the years, getting better as they age. As with wine, each vintage is uniquely dependent on
the weather, temperature of the sea and its currents, and the olive oil.
