Known as the holy grail of raw milk cheeses, it has a delicately melting, creamy quality that is perfectly delectable eaten from a spoon at room temperature. Do bake it whole until the canter turns molten and gooey like a personal fondue pot!
NOTE: As the cheese ripens, the crust develops a crumpled look, and grows a surface layer of mold which is normal. The top rind, together with its layer surface of molds should be removed before consumption of the chesses to reveal a beautiful soft yellow paste below.
