Put the Agen prunes in some red wine (be generous with the wine) in a saucepan, and confit over a low heat.
During cooking, add the cinnamon, a pinch of nutmeg and three tablespoons of honey.
Leave to simmer on a very low heat for 40 minutes.
Leave the prunes to cool.
Place a large scoop of ice cream in an ice cream bowl, attractive glass or soup dish, and add a few lukewarm confit prunes.
Sprinkle over a few flaked almonds and serve before the ice cream melts!
