Confit Agen prunes in red wine with vanilla (or prun and armagnac) ice cream
‐ 500 g pitted Agen prunes
‐ 1 bottle Buzet AOC red wine
‐ Prune and Armagnac ice cream or vanilla ice cream
‐ Cinnamon, nutmeg
‐ Flaked almonds
Put the Agen prunes in some red wine (be generous with the wine) in a saucepan, and confit over a low heat.
During cooking, add the cinnamon, a pinch of nutmeg and three tablespoons of honey.
Leave to simmer on a very low heat for 40 minutes.
Leave the prunes to cool.
Place a large scoop of ice cream in an ice cream bowl, attractive glass or soup dish, and add a few lukewarm confit prunes.
Sprinkle over a few flaked almonds and serve before the ice cream melts!
